This North Carolina Children, Youth, and Families at Risk (CYFAR) project uses community gardening to: empower communities to produce food for families, deliver hands-on nutrition education, create opportunities for youth to develop agri-related business skills, build leadership among community members, and provide engaging activities for family members of all ages to work together for a common purpose.

Roasted Okra

Roasting okra is a healthy alternative to frying. The outside of the pod becomes crispy while the inside remains tender, and the lack of cutting involved allows you to completely avoid the slime. Roasted okra is the perfect finger food and a great snack even for those who don’t claim to be veggie lovers. My family eats it like popcorn!

Here are the simple steps to roasting okra:
  1. Preheat oven to 375 degrees.
  2. Wash and dry about 12 3-inch pods per serving, but do not cut off the ends.
  3. Put on a cookie sheet prepared with olive oil, and spray the okra with olive oil.
  4. Bake about 15 to 20 minutes, or until beginning to brown.
  5. Try roasting on the grill as well.
